It's so easy to get into a breakfast rut: you choose what is quickest and requires the least clean up. These Gluten-Free Oatmeal Muffins are the perfect way to get yourself out of that breakfast rut and they pack a nutritional punch with Gluten-Free Oats from Bob's Red Mill and Stonyfield yogurt and aren't loaded up with sugar (I reduced the amount and subbed in maple syrup).

These muffins are super simple to mix up: just toss the ingredients with no fuss into a bowl, stir, place in the pan and bake. And with the substitution of Stonyfield Greek Yogurt for oil, you'll get a little added protein. They were an instant hit (Jack ate 4 of them when they came out of the oven) and the kids asked for them again in the morning.
