Relay and Rally Cookies

In 2014 I ran a “Reach the Beach” rally and I made cookies that I dubbed the "Relay and Rally" cookie. Well, I have recently come back to these gems and I thought you might enjoy them too! If you love cookies with texture, these are right up your ally, chock-full of nuts and seeds, these are a great alternative to traditional chocolate chip cookies.

I simply took a traditional Chocolate Chip Cookie recipe and made a variety of substitutions to create the perfect runner fuel for a 200 mile relay. They were a big hit then, and I think you’ll enjoy them now too!

Relay And Rally Cookies

Ingredients:

1/2 cup quick oats

2 1/4 cup flour (mix of white and whole wheat)

1 1/2 tsp. baking soda

1 tsp. salt

1/2 cup Health Warrior chia seeds

1 cup chopped walnuts

3/4 cup shredded coconut

1/4 tsp. cinnamon

1 cup coconut oil

1/3 cup brown sugar

1/3 cup white sugar

1 1/2 tsp. vanilla

2 eggs (Pete and Jerry's Organic eggs of course!)

16 oz bag mini dark chocolate chips

Directions:

Preheat oven to 350.

1. Mix wet and dry ingredients in separate bowls.

2. Slowly add dry mixture into wet.

3. Stir in chocolate chips and mix thoroughly.

4. Spoon dough on to non-stick or greased cookie sheet.

5. Bake for 12 minutes at 350.

Refuel and enjoy!
