Brunch Strata: Traditional Recipe for a Festive Family Meal

Every Christmas morning, the tree is lit, Christmas music playing, festive jammies on, coffee mug in hand and a full plate of Christmas brunch. And on that plate are traditional recipes my Mom and Grandma have passed down, plus a few touches of our own.
I love tradition. I love the connection I feel when I knead the dough for my mom’s Sticky Buns or crack the eggs for my Grandma’s Strata. It brings back memories of New England Christmases as a child or the years my husband and I spent in Arizona sharing Christmas with my Grandparents, where you have to make it feel like Christmas on a warm desert day.

This year, for each recipe I’ll be using Pete and Gerry’s Organic Eggs adding another family’s ‘history,’ rich in tradition, to my own. Christmas Brunch Strata
1 small onion
1 bell pepper
2 cloves garlic
2 sprigs of rosemary
1 lb sweet Italian turkey sausage casings removed
6 Pete and Gerry’s Organic Eggs
1 cup whole milk
1 tsp oregano
1 loaf brioche bread
½ cup shredded cheese blend
Preheat oven to 350⁰F and spray a 9x13 in baking dish with non-stick spray or olive oil.
Finely chop onion, pepper and garlic. Sautee in olive oil until softened with sprigs of rosemary. Set aside and remove rosemary stems.
Remove sausage from casing and add to sautee pan. Cook until browned and set aside with peppers and onion mixture.
In a large mixing bowl, crack and beat Pete and Gerry’s Organic Eggs with milk. Add in oregano. Gently add in pepper, onion and sausage mixture stirring to combine.
Tear or cut brioche loaf into 1 inch cube chunks. Spread on bottom of baking dish.
Pour egg, pepper, onion, and sausage over the bread. Sprinkle cheese on top and bake for 45-50 min or until golden brown and bubbling on top.
