Turkey Curry Carrot Quinoa Burgers
It's a mouthful: Turkey Curry Carrot Quinoa Burgers. But it's a delicious mouthful! Seriously these little gems are so delicious. I've been in need of a quick, grab and go protein for lunches and snacks for when leftovers are in short supply and came up with these burgers that hit the spot. They are soooo easy to make, literally toss together and bake. And the possibilities are endless: put it on a whole grain bun and serve as a burger or eat it as a finger food dipped into the homemade Greek yogurt and cucumber sauce, or crumble it up as a salad topper. Really theres no wrong way or wrong time to eat these and they are kid approved my 6 year-old and 13 month-old both gobbled them up...the 3 year-old was a little skeptical.

Turkey Curry Carrot Quinoa Burgers
1 lb lean ground turkey
1 1/2 cup cooked quinoa
2 large carrots shredded
1 egg
1 Tbs. curry powder
salt and pepper
Preheat oven to 425º
Combine all ingredients in a large bowl and mash/mix together until thoroughly combined.
Form patties with the mixture and place on cookie sheet greased with coconut oil.
Bake at 425º for 20-25 minutes.
Yields 7-8 patties depending on the size and thickness.

Homemade Greek Yogurt and Cucumber Sauce
1/2 cup Stonyfield Greek Yogurt
1/4 cup diced cucmber
1 Tbs lemon juice
salt and pepper to taste
Combine ingredients in food processor until a smooth sauce is formed.
