Spicy Roasted Kale Chips and Cauliflower Dippers
During this pregnancy I've been craving all things spicy: jalapenos, banana peppers, Tabasco sauce, Franks Red Hot, Sriracha. For a while Jalapeno Cheddar Kettle Cooked potato chips seemed to perfectly satisfy that craving, but a generous serving of those and I felt bloated and blah (more so than any normal pregnant lady). So I decided to try to find a way to satisfy my craving for spicy, crunchy and salty in other ways and devised a kick-ass spice rub which I used to generously season kale and cauliflower. Let me tell you this is not for the faint of heart and I needed a nice cool way to balance the spice to a made a Cool Cucumber Dill dipping sauce.
You could easily tailor this recipe to be less spicy by omitting or reducing the cayenne or red pepper flakes. And if you're doing the Whole 30 or trying to follow a Paleo diet, these two recipes (with the exception of the dipping sauce are compliant).
Spice Rub:
This yields a generous amount and you don't have to use it all.
1 Tbs. cumin
1 Tbs. curry powder
1Tbs. garlic Powder
1 tsp. sea salt
1 tsp. black pepper
1 tsp. thyme
1 tsp. paprika
1tsp. tumeric
`1/2 tsp cayenne
1/2 tsp red pepper flakes
(You could also add finely grated Parmesan cheese to this mix 1/4 cup or so to add flavor and texture.)
Spicy Kale Chips:
Wash and pat dry.
Generously rub kale with olive oil and toss in spice rub. Place on cookie sheet.
Bake at 400 in preheated oven for 10 minutes.
Spicy Cauliflower Dippers:
Wash and pat dry.
Toss in olive oil and spice rub. Place on cookie sheet.
Bake at 400 in preheated oven for 25-30 min or until golden brown on the edges.
Cool Cucumber Dill Dipping Sauce:
1/2 Stonyfield Plain Greek Yogurt
1/2 cup roughly chopped cucumber
1 tsp. dill
salt and pepper
Mix all ingredients in food processor.
