Ditching the Dinner Rut: What's on the Menu this Week
Lately our dinners have been…well, uninspired. The same old thing week-to-week: tacos, beef stroganoff, roasted chicken, spaghetti. Last winter and spring I was on a great two-week meal plan that had me planning two weeks worth of meals and shopping for them all in one day and spending a good portion of the day on Sunday food prepping. It was a great little system and planning two weeks in a row ensured we had a nice variety of food. Over the summer I got out of that habit, simply because we would grill every night or we were gone. And there were some fresh veggies from our garden to add to whatever it was we threw on the grill. Now I've kind of fallen in to a pattern of boring. So this weekend I sat down with my trusty cookbook binder and spent a bit of time on Pinterest and came up with a revitalized menu for this week.
This is what I'll be making:
Monday: Chicken Cesar Salad with Roasted Fingerling Potatoes in chipotle seasoning
Tuesday:Crockpot Mile-High Lasagne from The Dinner-Mom and Kale-Red Pepper Salad
Wednesday:Quinoa Enchilada Casserole from DamnDelicious and Garden Salad
Thursday:Date Night!
Friday:Three Meat Chili and Cornbread
Saturday: Homemade Pizza, Cheese and Apricot, Goat Cheese and Carmelized Onion
Sunday:Minestrone Soup and Homemade Honey Wheat Bread
I also plan on making a big crockpot full of Pumpkin Pie Overnight Oats from Sweet Anna's.
Tentatively on the schedule for next week (thinking two weeks at at time really helps me spice things up and get a good variety into our weekly meals): White Chicken Chili, Shepard's Pie and Lindsey's Kale and Spicy Sausage Soup.
