Peanut Butter and Jelly Popsicles--Summer Fun with Stonyfield

There's something about summer that makes me feel just a little nostalgic; recalling childhood summers filled with endless hours on the swing set, trips to the beach and picnic lunches. Of course the old stand-by picnic food was peanut butter and jelly. As I kid I wasn't such a fan, but now as an adult I often crave a good peanut butter and jelly sandwich. A classically perfect combo.
I decided to put a twist on the summer time favorite by making it into a popsicle. I used Stonyfield Organic Whole Milk French Vanilla Yogurt, fresh strawberry puree (as our "jelly") and a peanut butter drizzle made from a mixture of smooth peanut butter and honey. The process was super simple and Sophia was able to help assemble them, and of course Jack helped devour them once they were ready.
1. Puree 1-2 cups of fresh strawberries (we happened to go strawberry picking the morning we made these, so our strawberries couldn't have been fresher!). Add a little sugar if you strawberries are on the tart side (1 tsp is fine). Set aside. 2. Mix 1/2 cup of smooth peanut butter with 1/4 cup of honey. Set aside. 3. Spoon Stonyfield Organic Whole Milk French Vanilla Yogurt into six popsicle molds. Add strawberry puree then peanut butter. Alternate the ingredients until the popsicle mold is filled. 4. Let set in freezer for 6 hours or until frozen solid. Enjoy!
